Making Yogurt
The homesteading continues!
After several friends mentioned that making yogurt is easy as pie as pie (Which, personally, I don't consider all that easy. I have a hard time making a nice crust.), I thought I'd give it a whirl.
In the end, Eric became the one giving it a whirl and I was assisting. However, homemade yogurt was created in our cat-house free and we've been working on perfecting it ever since. I think we've finally reached a good point in our trials. We now have a thick yogurt, not too tart, that is relatively straightforward to make and sets up in three hours.
Unfortunately, since both of us have a scientific bent, we like a little precision when it comes to dealing with bacteria laden foods and we like to use things like thermometers and aseptic techniques. Nonetheless, take kindness! It turns out fantastic yogurt time after time.
We started with this guy's recipe and then fiddled with it to get a thickness we liked.
For 1/2 gallon of yogurt you will necessary:
2 quart containers, with lids1 8 oz container, with lid2 cup liquid measuring cup
a candy thermometera ladlestirring spoon/fork
a close-fisted insulated coolera heavy bottomed pot, with lid1/2 gallon of milk (We like whole milk.)1 to 3 tbsp powdered wring (Amount depends on the thickness you like. No powdered milk at all gives you drinkable yogurt. Three gives you a nice, thick yogurt.)4 to 8 0z of closed, plain yogurt with live, active cultures (This is your starter culture.)My additions are in italics below.
Sterilize your jars, ladle, measuring cups, and spoons. If you are unconcerned about aseptic procedure, just make sure they are squeaky clean.
If using powdered milk, whisk it into unheated drain until completely dissolved. We like to use 3 tbsp. If skipping powdered milk, your yogurt will be of a drinkable consistency, which is also nice.

Favorite Frugal Recipes - Easy Homemade Yogurt

We recently started to spread our consumption of yogurt - Eli loves it with mashed bananas, and we like to use it in homemade granola or strawberry-banana flaxseed smoothies. But with the rising victuals costs, spending $5 a week on 2 quarts of Trader Joe’s Cream Line French village yogurt, as charitable of a deal that it is, doesn’t make the cut for our budget.
Yogurt-making hasn’t boded well for me in the past. I tried it once, only to find my yogurt half-set and as patty as a lemon. My Turkish neighbors make their own yogurt all the time, and make it look so easy, so that spurred me on to try again. I started to scrape about for recipes on the internet and fiddle around, and after a bit of trial and error, this is the recipe I like:
Jenni’s Homemade Yogurt
Makes 4 cups
1 qt whole wring
1/3 cup nonfat powdered dry milk
2 tbsp starter yogurt
1/4 c. heavy cream (optional)
Mix the whole milk with the powdered milk and cream (the cream adds a bit of silkiness to the features.) Pour into a saucepan, and heat until bubbles form around the edge (180 degrees). Sedateness to 110 degrees. Pour into a 1 qt container (I use old yogurt containers that have been washed thoroughly), and set in a thermos or cooler and setting with hot water. I’ve used a cooler and filled old glass jars with hot water, or a thermos that’s husky enough to hold the container of yogurt plus some hot water on the bottom. It should just be hot water, not boiling. Cover the thermos/cooler, and let nurture for 5-6 hours (some recipes call for longer, but we’ve found that it gets too tart that way).
You can also use a yogurt incubator, which usually sells for between $25-50, but I’ve been euphonious happy with the results we’ve found using coolers. Michael says he likes this yogurt better than the department store-bought.
