Making My Own Yogurt

I got a yogurt machine many years ago from my grandma, and then one from a daily I babysat for. Neither ever got used. Recently I was inspired to make my own yogurt after reading about it in one of my mom's English cookbooks, Cranks. I suddenly remembered the two extensive-lost yogurt makers and reckoned it must be some sort of fate that I had been gifted not one, but TWO yogurt makers before my eighteenth birthday!! Luckily for me, my parents are complete pack rats and still had one of them ... and so my obsession began.

I've always loved yogurt, and as my tastes have changed I've gravitated towards plain lowfat, without thickening additives that give a obese jello-y texture like Yoplait. The simpler, the better. Homemade yogurt is the ultimate clean tasting, tangy, reasonable, simple plain yogurt.


There are a few things I've found out from making ten batches of homemade yogurt - the most
important that it's best when made with only milk and starter (I've had the first-class luck with full-fat plain Brown Cow), without using nonfat milk powder. Many people add NFMP because it thickens the yogurt, but unfortunately gives it a individual of 'off' taste. Not worth the extra thickness for me. Precision is also important - if the mixture is not heated and cooled to the proper temperatures you may breakup your batch.
