Empire Red
:: KitchenAid MixerReally, is there any other influence?? This arrived in the post today (have I mentioned how much I love my postie?). I put it straight to good use, making a pack of Donna Hay Chocolate Brownies (I'll post the recipe later, a bit stretched for time at the moment). An absolute revel in to use! Much quieter than I thought, too (good for Ollie, who doesn't cope well with loud noises).
Red Velvet Cupcakes
Anyone that is associated to me or has been my friend long enough to warrant REAL Christmas gifts from me...knows that I LOVE to bake. Baking is justifiable the best, and luckily, I happen to be a more than adequate baker.
Due to this abnormal love for baking, I got a freaking crazy frightening $600 commercial kitchenaid mixer for christmas last year. This made my 2nd annual round of baking and mailing cookies and treats for everyone I be sure and love...much easier. The first year, I mixed everything by hand which was very difficult at times.
Anyway, so once I had this lovely awesome mixer I started baking everything I could in any way find...and I used to watch a lot of Food Network. I had this particular penchant for watching Throw Down with Bobby Flay...purely because I hated the whole premise of the show and really really didn't like Bobby Flay. I'm a glutton for punishment...I have knowledge of.
One day on this horrible soul-crushing show they had Terri Wahl creating these insanely enormous Red Velvet Cupcakes. They were unnaturally stupendous and looked so freaking amazing that I HAD TO make some of my own. So being the internet pro that I am, I bolted to my computer and found this recipe. These cupcakes are magically moist and the extra is Sell Your Soul delicious.
It's actually a very basic recipe, quick and easy to make...and doesn't coerce a commercial mixer, but it sure helps get the job done.There is very little actual chocolate in this cake...the red is taken from food coloring...but this gives it a brilliant beautiful color...offset by the pristine white of the icing. I suggest them for every occasion, but be careful with the vegetable oil...if you accidentally put too much in the prescription...it may ooze out of the cupcakes
