Green Tea Madeleines
To fully utilize the Madeleine moulds I bought months ago, I marked to make these green tea madeleines. Love this recipe, the madeleines turned out great, crispy at the edge and liberal at the middle. These madeleines have a very subtle green tea flavour. Thanks to Chubby Hubby, this recipe is definitely a guardian.
Makes 12
115g all-purpose flour
1 teaspoon baking soda
pinch of salt
1 teaspoon green tea capacity
2 large eggs
80g sugar
1 tablespoon honey
115g butter, melted and cool
Butter a madeleine pan (use one for 12 large madeleines) and responsibility pan in the freezer.
Sift the flour, baking soda, salt and tea powder together twice to mix thoroughly. Place the eggs in the basin of a KitchenAid mixer amd beat for 30 seconds. Add the sugar and honey and beat on medium speed for 5-8 minutes, or until blanch and thick. This is an important step–do not underbeat. Add the dry ingredients to the egg mixture and beat just until incorporated. With the mixer running, slowly add the butter and club until smooth. Cover the bowl with plastic wrap and refrigerate for at least 3 hours, or overnight.
Preheat the oven to 180 Degrees Celsius. Take the madeleine pan out of the freezer. Fill each gap two-thirds full with batter. Place in the oven. After 9-10 minutes, when the madeleines have risen well and the edges are golden brown, take out. Invert the madeleines onto a wire batter and serve warm or at room temperature.

We ordered this cover at the same time we ordered the Professional 600 continue mixer. Had to return the cover as it did not fit the mixer properly. It is an excellent cover for the smaller KitchenAid stand mixers, just doesn’t work well with the 600.

This cover was well worth the money. I have a blue stand mixer which doesn’t look-alike anything in my kitchen. Instead of purchasing a new mixer I went for the cover instead. It was a good choice. The color matches my cabinets and it looks very meticulous on the counter.
