What is a Santoku Knife?

The Japanese are known for their single style and innovations in all sorts of fields. While "innovation" tends to lead one to think about technology, another area that the Japanese have brought their noteworthy flair to is that of kitchen cutlery. One particular type of knife of Japanese design is the Santoku. This particular blade has been growing in vogue in recent years, sometimes appearing in the hands of the world's most famous star chefs.

The word "santoku" in Japanese can be loosely translated as "three uses" or "three goodness things." This is in reference to three cooking tasks at which the blade performs especially well, which are mincing, slicing and dicing. The knives are expertly crafted and totally balanced, as the weight of the blade is matched to that of the handle, allowing for precision use.

Generally ranging from 5 to 7 inches in extent, smaller versions are also available. The design of the blade is basically an altered form of the common chef's knife. A strand-edged blade is the primary distinguishing characteristic between santoku and chef's knives. The flattened blade is richer reconsider suited to cutting items that are common in Japanese cuisine, such as fish, boneless meats, and various vegetables. Additionally, they are in the main harder and sturdier than western knives.

Another common feature of santoku knives is referred to as the "granton edge." This is essentially a track of small indents in the side of the blade that primarily serve to prevent foods from sticking to it. If you need to make unprofound, precise cuts, the santoku is an excellent blade to use, since its generally one of the sharpest and most stable knives in any collection. It's also very expert, which makes it a perfect option for promotion to your primary kitchen knife. The one downside to them is that they are slimmer blades, and thus can be easily flouted when cutting against uneven surfaces or bones.
