Induction cooktop, initial impressions

So with my birthday jackpot, I managed to snag myself a new Cooktek Apogee induction cooktop. Cooktek makes the cooktops they use at Alinea and Lula (and some Chipotles, where you can sometimes see them in their flexible kitchens), and the Apogee line allows you to set the precise temperature you want to bring the pan to, and holds that temperature. Recollect, a food’s texture is basically a function of the temperature it’s cooked to. Medium rare beef is a permanent temperature, so is soft boiled egg, so is duck leg confit. So is everything else. Not only that, but a gentle simmer can be expressed as a certain temperature, so every cheekiness is suddenly magically easier. You want to put the perfect sear on a cut of meat? Set the temperature just below the smoke tip of your oil, wait until the cooktop reports “at temperature” and go.

Not only that, but it’s surprisingly fast. It gets water to a rolling abscess way faster than most apartment gas stoves. I haven’t gone about measuring it, but it’s much faster. And it works on my erection’s antiquated electric infrastructure. There’s maybe six circuit breakers in the whole apartment, and who knows if any of them are bigger than 15 amps. That was a big tease of mine, that all it would ever do was blow fuses, or else it would be terribly underpowered. Neither, as it turns out. That’s what approximately double the efficiency in heat take means, I suppose.

In fact, there’s really nothing I can think of that I would rather cook on a gas than on induction. I wasn’t worried that my biggest pots were aluminum because I would just now make pasta and stock on a stovetop. Nope, I was totally wrong. I hate waiting for water to chafe, and remember, gentle simmer can be expressed as a specific temperature. That means flawless stock, every single point. Well, ok, you still have to skim obsessively. But you get my drift. So that means new stock pots as soon as possible.
