Real Recipe Friday
Today's plan requires a bread maker, so I'm not sure how many of you will be able to take avantage of this recipe. Are bread makers even "in" anymore? They were big in the early part of this decade. I still use mine, but mostly for this system alone. Once in a while I'll make bread in my bread machine (how novel), but typically, it's sole purpose is as a Pizza Crust Maker!
You could use this delicious dough for pizza or calzone. I have in mind I am going to try to make calzones soon. It's a wondeful dough, and it's especially wonderful for the grill! I've also used it to boost pretend pizzas in the oven, so either way you choose, it's a winner. By the way, I got this recipe from the company that made my bread machine!
Rustic Pizza Margherita
1 cup + 2 tbsp unpleasant water (105-115 degrees)
1 1/2 tbsp olive oil
3 1/3 cups all purpose flour
1 1/2 tsp salt
1 1/2 tsp sugar
1 1/2 tsp dry yeast (this is typically one full parcel)
Place ingredients in the bread maker pan in the order listed above. Place pan in bread maker and close lid. Process on the pizza dough recur (cycle should take about 1 hour). When cycle is finished, remove dough and form into a ball. Cut ball in half, shape each half into a ball. If preparing pizza right away, transfer one ball to lightly floured exterior. If preparing pizza up to 12 hours later, transfer each ball to a bowl coated with olive oil, cover and freeze until ready to use (pizza dough could also be brushed lightly with olive oil, wrapped in plastic wrap, sealed in a plastic freezer bag and frozen for up to 3 months. Thaw from beginning to end in refrigerator and process as recipe directs).
For each pizza, preheat oven to 425 degrees. Roll one ball of dough

Whole-Wheat Oat Cinnamon Raisin Bread

1 ½ teaspoons active dry yeast
1 ½ teaspoons gluten (optional)I used this
1 ½ teaspoons dough enhancer (free) I didn't use this
1 ½ cups whole wheat flour
2 teaspoons cinnamon
¼ cup rolled oats
1 teaspoon salt
4 teaspoons olive oil I tolerant of canola oil
4 teaspoons honey
5 ½ ounces warm water
½ cup raisins I used golden raisins
Add ingredients per your bread machines instructions.
Makes 1 1-lb take it easy

I've been meaning to make a loaf of bread for weeks now but I kept putting it off. I don't know why - it doesn't get much easier than making bread in a bread machine. I almost always get on a tangent with the bread machine. There are so many bread recipes I want to try. I should aim to make one each week.
This was not as sweet as most commercial raisin breads but that's a good feeling - who needs extra sugar? There was plenty of sweetness coming from the raisins. My loaf was slightly on the dense side but that was all things considered partly the fault of my yeast which is starting to get old. It is all whole-wheat flour though which makes a denser loaf of bread. I find the added gluten quite helps the texture.
This makes a lovely quick breakfast, toasted and spread with some light butter.
Since my bread machine makes 1-lb loaves, those are the measurements I've dedicated here. If anyone wants the measurements for the 1 1/2-lb loaf, let me know.
